Yogurt substitutes
Find substitutes for yogurt, with practical ratios and notes on texture, rise, moisture, flavour and calories.
What yogurt does in a recipe
Yogurt is acid, moisture and milk protein: it tenderises crumb, activates soda, and stands in for higher-fat dairy in most places.
Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.
Substitutes and ratios
| Use | Ratio | Best for | What changes |
|---|---|---|---|
| Sour cream | 1 : 1 | baking, dips, toppings | Richer and heavier; works everywhere yogurt works. More calories. |
| Buttermilk, thinned | ¾ cup buttermilk per cup yogurt | batters, marinades | Same acid job, much thinner; cut other liquids. Fewer calories. |
| Silken tofu, blended | 1 : 1 | smoothies, dips, cheesecake bases | Neutral, creamy and protein-rich; no acid, so add a teaspoon of lemon if the recipe needs it. Fewer calories. |

Frequently asked questions
Does Greek yogurt substitute for regular one to one in baking?
No — Greek yogurt is strained to nearly double the solids. Thin it with milk or water to a pouring consistency first, or the batter will be too stiff and dry.
Ingredients with a similar job
Milk
Milk is water, protein, sugar and a little fat. It hydrates flour, helps browning through its sugars and adds mild richness. Most substitutes only need to do the liquid job.
Buttermilk
Buttermilk is acidic milk. The acid is the point: it reacts with baking soda to make lift and it tenderises the crumb. A substitute must bring the acid, not just the liquid.
Heavy cream
Cream brings fat and body: it whips, it enriches, and it will not curdle in hot acid the way milk will. The fat content is the whole job description.
Sour cream
Sour cream is cream fermented to acidity: richness plus tang, and enough fat to be stable in heat. It enriches, tenderises and carries flavour.
