What yeast does in a recipe

Yeast is a living leavener: it ferments sugars into gas and flavour over hours. It is not interchangeable with chemical leaveners, which work in minutes.

Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.

UseRatioBest forWhat changes
Sourdough starter100 g fed starter per 7 g yeast, cut 100 g flour and 100 g waterbreadReplaces yeast and adds the sourdough flavour; fermentation takes far longer and the dough schedule changes. Calories similar.
Baking soda + acid½ tsp soda + ½ tsp acid per 7 g yeastsoda bread, quick loaves onlyChemical leavening in minutes instead of hours; the crumb and flavour are a different bread. Not a swap for risen loaves.
Instant yeast for active dry¾ tsp per 1 tsp active dryany yeast doughInstant yeast skips the proofing step and mixes straight into flour. Identical result, faster.

Frequently asked questions

Can I make bread faster by using more yeast?

Only a little, and at a price: more yeast ferments faster but the dough develops less flavour, and beyond a point the gas outruns the gluten and the loaf collapses. Time is an ingredient in bread.

Ingredients with a similar job

Baking powder

Baking powder is baking soda pre-mixed with an acid and a starch. It releases gas twice — a little on mixing, most on heating — and needs no other acid in the recipe.

Baking soda

Baking soda is pure alkali. It releases gas only when it meets acid and moisture, and it also speeds browning and weakens gluten — which is why soda breads are tender.
