Wheat flour substitutes
Find substitutes for wheat flour, with practical ratios and notes on texture, rise, moisture, flavour and calories.
What wheat flour does in a recipe
Flour is the skeleton: its gluten network traps gas and holds the shape, and its starch absorbs liquid. Every substitute trades some structure away.
Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.
Substitutes and ratios
| Use | Ratio | Best for | What changes |
|---|---|---|---|
| Oat flour (ground oats) | 1 cup + 2 tbsp per cup flour | muffins, pancakes, crumbles | No gluten, so nothing traps the gas; use where tenderness is welcome and rise is optional. Slightly fewer calories. |
| Almond flour | 1 cup + 3 tbsp per cup flour | cakes, cookies | Fat-rich and gluten-free; bakes moist and dense, and browns fast. More calories than wheat. |
| Buckwheat flour | 1 : 1 | pancakes, blini, soba-style noodles | No gluten but a strong flavour of its own; classic in pancakes. Calories similar. |
| Spelt flour | 1 : 1 | bread, pastry | Has gluten, so it behaves like a nuttier, slightly weaker wheat; the closest swap there is. Calories similar. |

Frequently asked questions
Can gluten-free flours substitute one to one for wheat?
Not as a rule, and never in bread. Wheat's gluten is doing structural work no single other flour can do; the swap works in forgiving batters and fails where the rise is the point. Gluten-free baking needs blends, not substitutions.
Ingredients with a similar job
Cornstarch
Cornstarch thickens by swelling in hot liquid, and it thickens twice as hard as flour with a clearer, glossier result. It is pure starch: no protein, no flavour.
Breadcrumbs
Breadcrumbs do three jobs: they stretch minced meat, they give a fried crust, and they soak up liquid in gratins and stuffings.
