What vanilla extract does in a recipe

Vanilla is pure flavour: it rounds the other notes and masks the eggy edge in baked goods. It has no structural job at all.

Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.

Frequently asked questions

What is the difference between extract, essence and paste?

Extract is alcohol with vanilla compounds; essence can be synthetic vanillin (fine for baking, flatter for custards); paste is extract with ground bean and seeds, used where you want the specks. They swap by the same spoon measure.

Cocoa is flavour with chemistry attached: natural cocoa is acidic and activates soda, Dutch-process is neutral and does not, and both absorb liquid hard.
