Milk substitutes
Find substitutes for milk, with practical ratios and notes on texture, rise, moisture, flavour and calories.
What milk does in a recipe
Milk is water, protein, sugar and a little fat. It hydrates flour, helps browning through its sugars and adds mild richness. Most substitutes only need to do the liquid job.
Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.
Substitutes and ratios
| Use | Ratio | Best for | What changes |
|---|---|---|---|
| Water + 1 tsp butter per cup | 1 : 1 | sauces, batters, bread | Replaces the liquid and most of the fat; the sugar is lost, so browning is paler. Saves about 60 kcal per cup against whole milk. |
| Plant milk (oat, soy, almond) | 1 : 1 | everything except pudding that needs milk protein | Oat and soy behave closest to dairy; almond is thinner. Calories vary from similar (soy) to much lower (almond). |
| Evaporated milk, half-and-half with water | 1 : 1 | baking, creamy sauces | Richer than milk and slightly caramelised; closer to whole milk than any powder. Slightly more calories. |
| Milk powder + water | 1 part powder : 4 parts water | bread, anything baked | The standard bakery swap; indistinguishable from fresh in dough. Calories equal. |

Frequently asked questions
Does plant milk work in a pudding or custard?
It sets if the pudding thickens with starch, and poorly if it depends on milk protein. Soy milk is the closest substitute where the recipe needs protein to set.
Ingredients with a similar job
Buttermilk
Buttermilk is acidic milk. The acid is the point: it reacts with baking soda to make lift and it tenderises the crumb. A substitute must bring the acid, not just the liquid.
Heavy cream
Cream brings fat and body: it whips, it enriches, and it will not curdle in hot acid the way milk will. The fat content is the whole job description.
Sour cream
Sour cream is cream fermented to acidity: richness plus tang, and enough fat to be stable in heat. It enriches, tenderises and carries flavour.
Yogurt
Yogurt is acid, moisture and milk protein: it tenderises crumb, activates soda, and stands in for higher-fat dairy in most places.
