Buttermilk substitutes
Find substitutes for buttermilk, with practical ratios and notes on texture, rise, moisture, flavour and calories.
What buttermilk does in a recipe
Buttermilk is acidic milk. The acid is the point: it reacts with baking soda to make lift and it tenderises the crumb. A substitute must bring the acid, not just the liquid.
Substitution is about structure, not taste, and no table row overrides an allergy. If the swap is for gluten, egg, dairy or nut allergy, use a recipe written for that diet: allergen-free baking changes the structure of the recipe, not just one ingredient.
Substitutes and ratios
| Use | Ratio | Best for | What changes |
|---|---|---|---|
| Milk + 1 tbsp lemon juice or vinegar per cup | rest 5–10 min to curdle | pancakes, soda bread, marinades | The standard substitute and functionally identical; the milk thickens as the acid works. Same calories as milk plus a trace. |
| Yogurt, thinned with milk or water | ¾ cup yogurt + ¼ cup liquid | baking, dressings | Acidic and thick; gives the same rise and a slightly richer crumb. Calories similar to whole-milk buttermilk. |
| Kefir | 1 : 1 | everything buttermilk does | Essentially the same product with more tang. Calories equal. |

Frequently asked questions
Is the lemon-juice-in-milk trick a real buttermilk?
It is a real acidified milk, which is what buttermilk does chemically, and it performs identically in a recipe. It is not cultured buttermilk and does not taste like it, but the chemistry — acid plus milk — is the same.
Ingredients with a similar job
Milk
Milk is water, protein, sugar and a little fat. It hydrates flour, helps browning through its sugars and adds mild richness. Most substitutes only need to do the liquid job.
Heavy cream
Cream brings fat and body: it whips, it enriches, and it will not curdle in hot acid the way milk will. The fat content is the whole job description.
Sour cream
Sour cream is cream fermented to acidity: richness plus tang, and enough fat to be stable in heat. It enriches, tenderises and carries flavour.
Yogurt
Yogurt is acid, moisture and milk protein: it tenderises crumb, activates soda, and stands in for higher-fat dairy in most places.
